Lunch & Learn:  What's the Deal with All of These Rabbinic Holidays?

Before the Rabbis came along, Judaism only had a handful of holidays: Rosh Hashanah, Yom Kippur, Sukkot, Shemini Atzeret, Passover and Shavuot.  The Rabbis added in many other holidays and days of remembrance, including Hanukkah and Tu BiShvat, as an example.  The question is, why?
